Black Bean and Corn Salsa

This black bean and corn salsa is a go-to for us. It's refreshing, spicy, tangy, and it makes a great addition to any meal or simply a salsa to enjoy with chippies. Let's make it!


Ingredients:

  • 2-3 tomatoes ( 1 cups worth)

  • 1/2 small red onion (1/3 cups worth)

  • 1-2 jalapeños

  • 1/2 bunch of cilantro

  • 1/2 cups of corn ( I use organic /no gmo)

  • 1 cup of cooked black beans

  • 1/2-1 lime

  • Salt to taste

Instructions:

Dice up tomatoes, onion, jalapeño and cilantro. Add them to a large bowl along with corn and black beans and give things a mix to ensure a good ingredient ratio. Squeeze 1/2 of the lime over and add salt. Give things a mix again and do a taste test. Your salsa should have a nice tanginess from the lime. If needed, add more lime and salt.

I eat this salsa with Chips, top off some grilled chicken, add it to a salad, or even make it into an egg scramble the next day.
