Chicken Tinga Tostadas
I don't know about you all, but I'm a sucker for a good tostad. These chicken tinga tostadas are a must-try if you are a tostada fan. They do require a bit of work, but 100% worth it! Trust me!
Ingredients:
3 chicken breast
1 yellow onion
5 garlic cloves
1 bay leaf
4 Roma tomatoes
2 California peppers ( stem removed/ seeded)
1-2 Chipotle peppers in adobo
Salt to taste
Tostadas ( I fry my own in Avocado oil)
Black refried beans ( If using canned, I love @sietefoods)
Lettuce shredded up
Avocado
Cotija cheese
Salsa
Instructions:
Begin by cooking the 3 chicken breasts with a small piece of onion, 2 garlic cloves, bay leaf, and salt. Cover with a tight lid and cook for 20 minutes. Remove from heat and set aside. Remove the chicken breast from the pot into a large bowl so they can cool down for shredding. Reserve the chicken broth.
In a separate pot, add the 4 Roma tomatoes cut in half, the two California peppers. And some water. Cover with a tight lid and cook for ten minutes. Remove from heat. Set aside.
Dice up the remainder of the onion, lettuce, and avocado.
Shredded the Cotija cheese and set aside.
Once the chicken breasts have cooled down. Shred the chicken up and set aside.
Add the boiled tomatoes, California peppers, 3 garlic cloves, 1-2 Chipotle peppers, and 1 cup of chicken broth into the blender. Blend until liquefied.
In a medium-sized pan over medium heat, add 3 tbs of avocado oil and the onions. Sautee until translucent, then add the shredded chicken. Mix things up and add the tomato sauce. I added a bit of the adobo sauce from the Chipotle peppers and salt. Do a quick salt check and cover with a tight lid. Lower temp to medium-low and allow to simmer for 15-20 minutes until most of the sauce has evaporated. Remove from heat.
I also took the time to make some black refried beans. Not necessary, but it definitely adds to this tostada. Don't have time to fry up beans? I personally love the canned refried beans by the SIETE brand.
Assemble your tostada:
Tostada, beans, chicken tinga, lettuce, cotija cheese, salsa, and avocado.
